Serves: 2
Time: 30 minutes
Difficulty: Very Easy
Ingredients
200g Dried Spaghetti
3 egg yolks
50g Parmesan
6 Rashers of bacon
2 cloves of garlic
Chilli flakes
50g Parsley
Salt & Pepper to taste
Method
Start by filling a pot with water and heavily salting (should taste like the sea) once boiling add the pasta and cook as per packet instructions. When done reserve pasta water after draining
While the pasta is cooking whisk together the egg yolks and parmesan in a bowl
Dice up the bacon and render the fat out slowly by adding it to a cold pan on medium heat
Once the bacon begins to release most of its fat add crushed garlic and chilli flakes and saute until the bacon begins to get crispy
Add the cooked pasta to the pan with the bacon and pour the egg and parmesan mixture over as well with the heat off to avoid scrambling the eggs
Toss everything well to coat evenly and add some pasta water as needed to help everything mix together and thicken up the sauce
Add some chopped parsely and dish into separate bowls
Serve with extra parmesan at the table
Happy Cooking!
