30 Minute Carbonara


It's the middle of the week and you've gotten home exhausted and now you're scrolling through UberEats trying to find the quickest delivery option that makes you feel the least guilty. Before you hit that check out button if you have a few simple ingredients in your pantry you could have a much more rewarding meal in 30 minutes or less.


Phil made this carbonara during our MasterChef challenge series and including making the pasta from scratch it only took 60 minutes. Its a quick cook, quick clean affair thats perfect for a midweek meal.

Time: 30 minutes

Difficulty: Very Easy


Ingredients

  • 200g Dried Spaghetti

  • 3 egg yolks

  • 50g Parmesan

  • 6 Rashers of bacon

  • 2 cloves of garlic

  • Chilli flakes

  • 50g Parsley

  • Salt & Pepper to taste

Method


  1. Start by filling a pot with water and heavily salting (should taste like the sea) once boiling add the pasta and cook as per packet instructions. When done reserve pasta water after draining

  2. While the pasta is cooking whisk together the egg yolks and parmesan in a bowl

  3. Dice up the bacon and render the fat out slowly by adding it to a cold pan on medium heat

  4. Once the bacon begins to release most of its fat add crushed garlic and chilli flakes and saute until the bacon begins to get crispy

  5. Add the cooked pasta to the pan with the bacon and pour the egg and parmesan mixture over as well with the heat off to avoid scrambling the eggs

  6. Toss everything well to coat evenly and add some pasta water as needed to help everything mix together and thicken up the sauce

  7. Add some chopped parsely and dish into separate bowls

  8. Serve with extra parmesan at the table
