Sweet Corn Fritters



It's Christmas Eve and to everyone celebrating that means a special time of the year long awaited is just on the horizon. Most of us will be busy with meal prep for the Christmas Day feast ahead but that also means you'll likely have a house full of hungry, tired people once all the work is done. These fritters are a great snack to munch on while busy at the oven but can also be served as part of your Christmas menu for any vegetarians and also work well as vehicles for myriad tasty treats. Using the McCain corn was a huge timesaver here as no corn shucking was required and they just need a quick thaw under water before being mixed into the batter.


Time: 20 Minutes

Serves: Makes 10 Fritters

Ingredients

  • 2 Cups Frozen Corn (thawed)

  • 2/3 Cup Flour

  • 1/2 Tsp Baking Powder

  • 1/2 Tsp Garlic Powder

  • 1/2 Tsp Onion Powder

  • 1/2 Tsp Salt

  • 1/2 Tsp Pepper

  • 1 Tsp Paprika

  • 1 Egg

  • 1/2 Cup Cream

  • Oil for frying

  • Spring Onions for garnish

Method

  1. Mix together the corn, flour, baking powder, garlic powder, onion powder, paprika, salt & pepper in a small bowl. Once well combined stir in the egg and cream to form a batter.

  2. Add oil to a small pan over medium high heat. It shouldn't be more than 1cm deep, this is a shallow fry. Once the oil is hot add a tablespoon of the batter and flatten out, fry for 2-3 minutes on either side or until golden brown. Transfer to a plate/dish lined with kitchen paper to absorb any excess oil.

  3. Garnish with spring onions and serve as per your preference.
