Spinach & Quinoa Patties

These vegetarian patties are packed with flavour and nutrients. They're also surprisingly filling due to the addition of the rolled oats and the uncooked spinach. They are also really versatile and may be used as a vehicle for breakfast toppings such as egg or as a patty in a vegetarian burger.

Ingredients
200g Uncooked Quinoa OR 2 Cups Pre-cooked quinoa
80g Rolled Oats
4 Eggs
3 Garlic Cloves (crushed)
200g Feta Cheese
100g Spinach
Salt & Pepper
Oil for frying
Optional Dip
1/4 Cup Yogurt
1 Tsp Sumac
Salt & Pepper
Method
Rinse the quinoa then place in a small pot with 500ml salted water. Bring to the boil and then simmer for 15 minutes before draining and setting aside to cool.
In a large bowl mix together the quinoa, oats, eggs, garlic, feta and chopped spinach. Season with 1 tsp salt and pepper. Set aside in the fridge for 30 minutes.
Form 12 equal patties with your hands. Place a small amount of oil in a frying pan and fry on medium heat until golden brown on either side.
Tip: We found using a cookie cutter mould helped to keep the patties together while frying the initial side.
You can eat these alone or serve them as a burger or in a health bowl with other greens and boiled egg.
