Christmas Gammon Frittata



The only thing better than feasting on Christmas Day is knowing you'll have a fridge full of leftovers to go through the next day. The Boxing Day leftover meals are some of our favourite because they get you to relive the Christmas spirit and feel like its happening all over again! Leftover frittata is great because its so versatile and is only limited by your imagination. Almost anything can fill this delicious breakfast/brunch treat to help you head towards the new year with a full stomach and a happy heart.


Time: 35 Minutes

Serves: 3-4

Difficulty: Easy


Ingredients

  • 4 Eggs

  • 50ml Cream

  • 1/2 Red Onion

  • 1 Clove Garlic

  • Leftover Gammon

  • Leftover Roast Potatoes

  • Leftover Brussel Sprouts

  • 6 Rosa Tomatoes

  • 1 Spring Onion

  • 150g Cheese of your choice


Method

  1. Preheat the oven to 200 C. Add a small amount of olive oil to a small 20cm frying pan over medium heat. Fry the sliced red onion for 1 minute then add the garlic and fry till fragrant.

  2. Dice up the leftovers and add to the pan (depending on how fully-loaded you want your frittata adjust the amount of filling accordingly). Fry for 3-4 minutes until warming.

  3. Whisk the eggs and cream together in a small bowl and then add to the pan, allow to fry for 2 minutes so the bottom begins to set. Meanwhile spread the halved tomatoes and sliced spring onions over the top and sprinkle with the cheese.

  4. Place in the oven for 15 Minutes. Once finished sprinkle fresh sliced spring onions over the top.
