Quick Noodle Salad


A dish to help get you to the end of the month- because payday is far and well there is probably a good chance that you have a some 2 minutes noodles in the back of your cupboard. So in an effort to fancy up your noodles and show you that there is more to eating them with the packet of dry seasoning they come with, I give you the cabbage and noodle salad.

Time: 10 minutes

Serves: 2

Difficulty: Easy

Ingredients

  • 1 packet of two-minute noodles

  • a handful of slice almonds

  • 1/2 a head of savoy cabbage

Dressing:

  • 3 tablespoons of olive oil

  • 1 tablespoon of soy sauce

  • 1 teaspoon of sugar

  • 1 tablespoon of vinegar

Method

  1. Break up the noodles and place on a lined baking sheet with the almonds.

  2. Place under the grill and toast until golden brown, remove from the oven and let cool

  3. Thinly slice the cabbage and place in a bowl

  4. Mix the cabbage with the toasted almonds and noodles.

  5. Mix the ingredients for the dressing together and pour over the salad.

  6. Toss and serve.
