Mushroom & Chorizo Gnocchi



It was a lazy weeknight and we wanted to make use of the stuff we had left over in the fridge from the weekend and ended up with this dish. It requires very few ingredients and the addition of ready made Woolworths Creamy Tomato pasta sauce makes this a meal that can be done in under 30 minutes if you aren't making your own gnocchi.

Ingredients

  • 500g Gnocchi (self-made/store bought)

  • 2 Tbsp Olive Oil

  • 1/2 White onion

  • 3 Cloves garlic

  • 1 Tsp Chilli flakes

  • 250g White Mushrooms

  • 1 Tbsp Butter

  • 100g Dried Porcini Mushroom

  • 150g Chorizo

  • 100g Baby Spinach

  • 200g Woolworths Creamy Tomato Sauce

  • Parmesan

Method

  1. Prepare the gnocchi as per the packet ingredients or our recipe

  2. In a medium saucepan heat the olive oil before frying the onion, garlic and chilli until fragrant

  3. Add the chopped white mushrooms and the butter to the pan and sauce until mushrooms are beginning to brown. Season well with salt & pepper. Dice the dried porcini very fine and add to pan at this stage as well. Sauce for another 2 minutes

  4. Slice chorizo to your desired thickness and add to the pan and fry until beginning to crisp up.

  5. When the gnocchi is almost finished, add the spinach to the pan until just wilted before adding the pasta sauce.

  6. Toss the gnocchi in the pan with the pasta sauce using preserved gnocchi water as desired to augment the thickness of the dish.

  7. Serve with a generous grating of parmesan cheese
