When I first read about a mango salsa I found it odd to add fruit to salsa but I have never been glad to be so wrong. The sweetness of the mango is tempered by the sour lime and the heat from the chilli balances it all. Its a great summer salsa and goes well with our pulled chicken but can also be a great addition to a summer lunch table, its a pop of colour and a surprising burst of flavours that's sure to impress.

Ingredients
1 Mango
1 Red Pepper
1 Red Onion
1 Red Chilli
1 Lime
Handful of Coriander
Method
Cut the mango, red pepper and red onion into small cubes (1x1cm; 2x1 at most) and mix together in a bowl
Deseed the chilli and add it to the bowl and squeeze the juice of a lime over everything.
Chop coriander and mix it in
