Herby Cheesy Eggs


The perfect start to a New Year of more excellent eating are these beautiful Herby Cheesy Eggs. They were inspired by a recipe from Chrissy Teigens Cravings and have become a staple in our breakfast repertoire ever since.

I mean just look at those eggs! Don't they look all sorts of delicious? Hot, cheesy, flavourful and packed with all of the garlic, they tick every box to ensure you get it all this morning. They go great served with some fresh/toasted sourdough and some crsipy bacon.


Serves: 2

Time: 20 minutes

Difficulty: Easy Peasy

Ingredients

  • 4 eggs

  • 1 tablespoon of unsalted butter

  • 2 tablespoons of thick cream

  • 1-2 tablespoons of parmesan

  • 1 teaspoon of thyme

  • 1 teaspoon of rosemary

  • 1 teaspoon of parsley

  • 1 clove of garlic

  • salt and pepper

Method

  1. Set your oven to grill

  2. In a separate bowl place, the grated the cheese, minced garlic and chopped thyme, rosemary and parsley, and set aside.

  3. In a shallow ovenproof dish about 15 m x 10cm (or ramekins - 1 per egg), place the butter and cream. Pop in the oven until the butter and cream start to bubble.

  4. While the dish is in the oven, crack the eggs into a cup - make sure not to break the yolk.

  5. Remove the dish from the oven and gently pour in the eggs. Top with cheese and herb mixture and season with salt and pepper.

  6. Pop back in the oven for 5- 7 minutes, until a golden crust forms on the top.

  7. Take out of the oven and let it set for 1 minute.

  8. Serve with toasted ciabatta and roasted bacon.
