Chicken Caesar Salad

A light, healthy but, as is standard for PhilAsh in the pan, an absolutely delicious meal for a quick and easy dinner or lunch.


Time: 45 Minutes

Serves: 4

Difficulty: Easy Peasy


Ingredients


Chicken

  • 4 Chicken Breast fillets

  • 4 Tbsp Olive Oil

  • 2 Garlic Cloves

  • 4 Sprigs Thyme

  • 1 Lemon

Dressing

  • 2 Egg Yolks

  • 1 Garlic Clove

  • 5 Anchovy Fillets

  • 2 Tbsp Lemon Juice

  • 1 tsp Dijon Mustard

  • 1/3 Cup Parmesan

  • Salt & Pepper

  • 1/2 Cup Olive Oil

Salad

  • Sourdough Bread (Stale is best)

  • 1 Tbsp Butter

  • 1 Garlic Clove

  • Parmesan Shavings

  • 300g Butter Lettuce

Method


Chicken

  1. Preheat Oven to 200 C

  2. Mix together the olive oil, lemon juice and zest, thyme and garlic

  3. Coat the chicken evenly with it and then season generously with salt and pepper, allow to marinate for at least 20 minutes

  4. Roast chicken breasts in the oven for 20-25 minutes

  5. Once cool slice/dice the breasts as per your preference

Dressing

  1. In a blender blitz together the egg yolks, garlic, anchovies, lemon juice, mustard and parmesan

  2. With the blender still running slowly drizzle in the olive oil until the dressing is fully emulsified

  3. Adjust seasoning with salt and pepper to your taste

Salad

  1. Make your own croutons by cutting the sourdough into squares and frying in a pan with butter and garlic until brown and crispy on all sides

  2. Build the salad with lettuce at the base, topped with chicken, croutons and parmesan shavings before dressing liberally with your dressing
