I discovered this salad 2 Christmases ago when I was looking for brignt and crunchy salad to pair with my mother's famous lamb. So when Phil was telling me about his plans for a dinner that consisted of lamb, mint, pasta and peas I knew we needed a fresh and crunchy side salad to balance out the richness of the dish. Cue my new favourite - Yotam Ottolenghi (yes I was a bit late to the Ottolengi fan club, but I am here now and that all that matters).
Its a different take on a salad with its combination of cooked and raw cauliflower, fresh herbs, pistachios and bursts of pomegranate. You can find the recipe here.
