  • Juice of 2 limes

Additional Sides

  • Gaucamole

  • Grated Cheese

  • Sour Cream/Creme Fraiche

  • Chopped coriander

  • Lime Wedges

Method

  1. Preheat the oven to 200 C

  2. Juice and zest the oranges and limes into a bowl

  3. Add to this the soy sauce, worcestershire sauce, sugar, cumin and garlic and mix well- preserve about 1/2 a cup of the marinade

  4. Put your steak in a shallow dish and pour the marinade over it so its well coated- leave to marinade for at least 45 minutes or up to 2 hours making sure to flip it occasionally

  5. Cut the bell peppers into strips and marinade in the previously reserved marinade

  6. Place the peppers in the preheated oven and roast for 30 minutes or until they begin to develop a slight char

  7. While the peppers are roasting chop and mix together all the ingredients for the salsa and set aside

  8. Remove the steak from the marinade and make sure to pat completely dry

  9. Put a cast-iron skillet/other oven proof pan on medium high heat and add oil to it

  10. Once the oil is hot add your steak and leave until it starts to develop a brown crust before flipping it over

  11. Once the underside starts to brown put it in the oven for 8-10 minutes for a medium steak (use a thermometer for best results: 67-70 C)

  12. Once ready leave the steak to rest for at least 5 minutes before slicing into 1cm strips

  13. Serve with your choice of additional sides and toppings and let people build delicious tortillas
