Camembert Phyllo Parcels

If you're stuck trying to think of a good canapé or starter these parcels are a great idea. They require almost no cooking and the prep time is quick as well. The gooey camembert is accompanied by a sweet cranberry jelly and the entire crispy parcel is served on a bed of prosciutto and peppery rocket.

Ingredients
125g Camembert Wheel
100g Cranberry Jelly
400g Puff Pastry
2 Tbsp Melted Butter
100g Prosciutto
80g Rocket
Method
Preheat the oven to 180 C. Defrost the puff pastry sheets and using a scissor or sharp knife cut the sheets into equal squares about 15x15cm. Lay 3 sheets on top of one another with the corners at different places so it has the shape of a 12 pointed star. you should make 8 parcels
Cut the camembert wheel in half across the equator so you have 2 full wheels. Divide each wheel into 8 wedges.
Brush the melted butter onto the puff pastry and place 2 wedges in the centre of the each stacked sheet and top with a generous teaspoon of cranberry. Scrunch the edges of the pastry towards the middle and squeeze tightly to form a small parcel.
Arrange the parcels on a baking sheet lined tray. Bake the parcels for 15-20 minutes. The pastry should be golden brown.
Arrange rocket on a plate, top with shreds of prosciutto and place the parcels on top as soon as they're out of the oven. Serve immediately.
