Broccoli & Blue Cheese Soup

Continuing our winter soup collection is this different but oh so delicious broccoli and blue cheese number. They say the best way to get kids to eat their vegetables is to hide them within cheese and the same goes for adults too!

Time: 40 Minutes

Serves: 4

Difficulty: Easy Peasy


  • 800g Broccoli

  • 200g Blue Cheese

  • 1 Onion (diced)

  • 4 Cloves Garlic (crushed)

  • 1 Tsp Thyme

  • 1 Litre Stock

  • 1 Cup Milk

  • 2 Tbsp Oil

  • Salt & Pepper

Optional Toppings

  • Chili Flakes

  • Feta Cheese


  1. Add oil to a pot on medium heat, fry onion for 1 minute before adding the garlic and thyme and cooking until fragrant.

  2. Add the broccoli and cook for 3-4 minutes before adding the stock and covering the pot to simmer for 20 minutes.

  3. Check that the broccoli is soft before adding the milk and blue cheese and blending the soup in a food processor or with a hand blender

  4. Serve with the optional toppings and some bread
